Red Beans and Rice
Red Beans cooked with onion, green pepper, celery spices(thyme, bay, oregano, garlic, etc) reduced down and added cayenne, Tabasco, and secret herbs. Served with rice.
Chicken and Mushroom Creole
Chicken breast diced pan done with mushrooms, celery, and onion in a spicy white sauce with arborio rice.
Poached shrimp and crawfish tail combined with celery, onion, caramelized onion, and biscuit crumbs with Cajun spicing formed into cakes and pan sautéed served with a remoulade sauce..
Cajun Pork Roast
Jordandal Pork loin drilled and rubbed with a Cajun vegetable spice mix and slow roasted served with fired potatoes.
