World Salad Night
Ground garbanzo paté with accompaniments.
Cold tomato and vegetable soup
Creamy corn soup with a little spicy overtone
Choose from the following entrees:
Combination of lightly sautéed tomato, onion, peppers, and eggplant with poached raisins and green and black olives served over greens with a vinaigrette dressing.
Tropical fruit salad
Pineapple, green melon, kiwi, banana, mango, and walnuts with a sweet coconut milk dressing over greens.
Ensalada de Rosa con Mariscos
Poached shrimp, mussels (out of the shell), and grilled tuna over a salad of red cabbage, jicama, pineapple, shredded spinach leaf, and finely cut beets with a lemony vinaigrette dressing.
Fatoosh ( Lebanese bread salad)
Tomato, red onion, cucumber, scallion, toasted pinenuts, and fresh mint drizzled with olive oil and vinegar and tossed with cut toasted pita bread.
Cajun Chicken Salad
Chicken marinated in a Cajun spice mix with vinager sautéed with sliced red onion, green peppers red peppers, and red onion topped with sliced fresh tomato, and cucumber served over greens with a piquant creamy dressing.
