Roasted red pepper humus with pita
Red Lentil, tomato, celery, onion, cilantro, and carrot with a spicy vegetable stock.

Shredded carrot with orange/lemon dressing.
Choose from the following entrees:

All entrees served as platters and include couscous, salad, feta cheese.
Squash, tomato, onion, green and red pepper, yam, red lentil, pear, apple, figs, apricot, dates, and mild chilies, cinnamon, honey, saffron, mint, cardamom, and coriander. Served with yogurt sauce.
Filo pie stuffed with prepared chicken, toasted walnutss, raisin, and egg with cinnamon, honey, saffron, and cilantro. Served with yogurt sauce.
Fish (seabass and tilapia) dipped in egg and coated with spiced semolina flour quick fried and served with a cilantro chermoula sauce.
Ground meat patties (sirloin and ground beef) with onion and garlic spiced with mint, cumin, lemon, pepper grilled and served with yogurt sauce.
