North African Overview

Moroccan Grilled Tuna
Yellow fin tuna steak marinated with lemon, orange, cilantro, onion, olive oil, cinnamon, cumin, garlic, and some spicy chilies grilled and topped with a fresh mint pesto..
Cous cous Marekesh
Eggplant, carrot, peppers, yam, tomato, butterbut squash, date, apricot, apple, pear, and garbanzo braised in their own juices with spices (cardamom, cinnamon, coriander, nutmeg) tagine style topped yogurt sauce.
Chicken breast marinated in a spicy roasted anise and lemon infused sauce grilled on skewers with bell pepper, tomato, and onion.
Marinated beef tenderloin pan sautéed with raisins, pears, and onion finished in a dark sauce with cinnamon and garlic.
Thin folded dough stuffed with chopped spiced garbanzo beans, sundried tomato, walnuts, scallions, and feta cheese.
